Here's a quick question.... Can you use a Video Toaster board as a simple color composite out card?

I'm trying to find some options to accomplish this task with my Amiga 2000

Yes, but I think you have to run Switcher and then exit to activate this... Possibly that will survive resets- I don't recall for sure.

Yes, if you run the Video Toaster Switcher program and then exit it, the composite program video output will remain active, with the Workbench UI overlayed on top of whatever the last selected video input was.

Interesting. But will it output what I'm doing on the UI to the composite?

Yes.

It may or may not work better if you run the Genlock program that comes with the Video Toaster Software, if your version has it. I'm not sure. I always thought that was the point of it but I've never used it.
